Dombeya Boulder Road Shiraz

Windy growing and ripening periods resulted in smaller berries, which leads to good concentration of both colour and flavour making 2020 an exceptional year for red wines.All the grapes were harvested by hand. Each vineyard block was vinified and kept separate through the entire maturation process. The grapes were crushed and immediately prepared for fermentation. Pump-overs were done 4 times a day with punch downs. Extended post maceration was done resulting on the wine being 30 day on the skins. This allows the wine to produce softer more approachable tannins. The wine was pressed into French oak barrels and left for aging for 12 months before blending and bottling took place.
