Dombeya Chardonnay

2021 harvest was received with great expectation after a very cool start to the growing season. Grapes retained a lot of acidity due to the cooler climate and flavour concentration is exceptional.The grapes were all handpicked on four different occasions to bring more complexity to the profile. All the grapes are whole bunch pressed in the cellar. 300L French oak barrels were used and of that approximately 15% new oak for this wine. Wine went through malolactic fermentation all naturally giving the wine good texture and mouthfeel. The wine matured in barrel on the gross lees for 11 months.
