Dombeya Merlot

Windy growing and ripening periods resulted in smaller berries, which will lead to good concentration of both colour and flavour making 2020 an exceptional year for red wines.All the fruit was hand-picked cooled down over night in a cool room before it was destemmed and vinified. Fermentation takes place at 25-28°C with 3-4 pump-overs and punch downs. Total maceration including fermentation was 11-15 days after which the wine is kept on the skins for an additional 2 weeks before pressed. Malo- lactic fermentation took place in Stainless Steel tanks. The wine was racked twice during the barrel maturation time of 12 months. This wine has 15% new oak and the balance 2nd and 3rd fill barrels.
